Inspector’s notes

Observed the setup at the 3-comp sink as wrong. Sink was set up with detergent in 2nd compartment. No other compartments were being used. If utilizing 3-comp sink to wash and sanitize utensils and equipment set the 3-comp sink up as follows. WASH, RINSE and SANITIZE Note: Per kitchen manager all utensils are washed in the high temp dishmachine.
