Boiled potatoes were observed cooling in the Reach In Cooler were observed improperly cooling with aluminum foil tightly covering the food. Discussed with Director that foods need to be uncovered while cooling so that they can cool most rapidly and safely. Director lifted cling film to allow air to escape and the potatoes to cool faster. Retrain staff to cool foods uncovered.

Discussed with Person In Charge that foods that are cooling must be uncovered, unstacked and spread out until they are completely cooled to 41F or lower. Then they can be arranged in storage mode. Retrain staff to cool foods uncovered, unstacked and spread out.

Provide temperature stickers, a maximum temperature registering thermometer, or another means of independently measuring the high temperature dish machines sanitizing cycle. Maintain on site to monitor machine to make sure it is adequately sanitizing.
