Inspector’s notes

Per discussion with the person in charge, they come in at 7 am, acidified rice are made by 8 am to use until noon, and then discard. New staff would come in at noon and make a new batch to use and discard within 4 hours (if there were still rice left). Business is using time as a public health control (TPHC) without written procedures and records not maintained. A TPHC will be sent along with the report for the person in charge to fill out and use it as necessary.
