The lettuce is in the top of a flip top cooler that is opened frequently and in a plastic pan (not metal). Quickly cool TCS foods that are prepared from room temperature ingredients. Food must be to 41F within 4 hours. CDI- The PIC had 30 mins left to cool the lettuce (first cut at 12pm) and was instructed to place in the reach in freezer to cool to 41F. Lettuce cooled to 40F.
