3-501.18; Priority; Observed salsa with a prep date of 10/8 in a plastic container in the walk-in cooler. Ready-To-Eat Time / Temperature Control for Safety Food shall be discarded after 7 days. The day of preparation or opening from a package shall count as day 1. CDI- salsa voluntarily discarded. Reminded kitchen staff of date marking requirements. All other foods observed with correct dates. No points taken today.
