Lime juice is not considering cooking. These instructions must be followed exactly as written: 1) Place an asterisk ( * ) beside the fish ceviche on the menu. 2) Place as asterisk ( * ) at the bottom of page with this statement; "May be served raw or undercooked. Consuming raw or undercooked meats; poultry; seafood; shellfish or eggs may increase your risk or foodborne illness." This must be completed within 10 days. The same applies to mussels (and other shellfish) if served raw.
