7-204.11 Priority: Quaternary ammonium sanitizer is above 400ppm at the 3 compartment sink. Sanitizer shall be mixed to within the tolerance range. Water was added to the sanitizer and was remixed to the correct concentration.

Sanitizer shall be mixed to within the tolerance range(200-400ppm for quaternary ammonium). Water was added to the sanitizer to make the correct concentration. Calibrate the sanitizer dispenser and the REHS will due a critical violation follow-up by October 27th. This is a repeat item.

3-305.11; Core; Case of turkey drumsticks stored on the floor of the walk-in freezer. Store all food at least 6 inches off the floor on shelving. Store all food where it is not exposed to splash; dust or other contamination. Store food in a clean and dry location. The turkey drumsticks were moved onto shelving.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
