3-302.15; Core; Vegetables from the sales floor in produce were pulled and transported in a brown box to meat department for use in ready-to-cook meal prep. Asparagus and potatoes are not washed but all other produce brought over is bagged and pre-washed. Raw fruits and vegetables shall be thoroughly washed in water to remove soil and other contaminants before being cut; combined with other ingredients; cooked; served; or offered for human consumption in ready-to-eat form. If not pre-washed; produce must be washed in the produce prep sink and transported to meat department in an approved; covered container.

Nonfood-contact surfaces of equipment that are exposed to splash; spillage; or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant; nonabsorbent; and smooth material. Do not line dunnage racks with cardboard.
