3-501.15 Cooling Methods (Pf); Cut tomatoes and cut lettuce were found cooling inside of containers with tightly fitted covers. Potentially hazardous food shall be cooled in containers with loose or no covering to facilitate cool air transfer. CDI- Lids were partially removed to allow for proper cooling.

CDI- Portioned milk in cups were relocated to alternate refrigeration during the inspection and will be stored in alternate refrigeration moving forward.
