Proper hot holding temperatures
3-501.16(A)(1) Lemon Pepper wings were being held hot at 93F; BBQ wings were held at 98F; Pepperoni Pizza was held hot at 117; and Cheese Pizza was held hot at 120F. These potentially hazardous foods must be held hot at 135F or above. Maintain TCS foods in hot holding at 135F or above. -P CDI... The food items were reheated to 168F.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Toxic substances properly identified stored & used
7-102.11 Common Name - Working Containers (Pf) - Noted label missing from a working squeeze bottle of detergent near the 3 compartment sink. Label working containers of toxic materials such as cleaners and sanitizers. CDI- EHS instructed staff to relabel.
Cleaning products, pesticides, or other chemicals were stored or labeled in a way that could let them get into food. This is serious because chemical contamination can make people sick quickly.

4-502.11(A)- Noted one of the steamers and hot box units are no longer functioning. Person in charge has already placed a work order for both units. Facility still awaiting repairs. Maintain utensils in good repair. Technician are required to assess and repairs non-functioning equipment as needed. Observation: The cutting boards are heavily scored and no longer ca be sanitized. Observation: Whole pears being offered on the service line with the label still affixed to fruit. Ensure that labels are removed and washed before placing out for consumption. 3-302.15; Core; A) Except as specified in par. (B) of this section and except for whole; raw fruits and vegetables that are intended for washing by the CONSUMER before consumption; raw fruits and vegetables shall be thoroughly washed in water to remove soil and other contaminants before being cut; combined with other ingredients; cooked; served; or offered for human consumption in READY-TO-EAT form. CDI: Operator removed labels and rewashed fruit placing back on the service line.
