3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P First refrigerator in the kitchen with four drawers has the Potato Salad at 42.8 degrees F. The thermometer registers temperature of 30; but the unit appears to not be circulating cold air to the top effectively. This was observed previously. Use your thermometer and monitor food temperature. Potato Salad shall be maintained at 41F and colder. Refrigerator repair requested; manager indicates it is under warranty and two other refrigerator drawers in other units are not closing properly.

3-603.11 (C )(2) Consumer Advisory has been removed from the printed menu. There is blue writing that indicates the raw items. The pricing menu has been removed which had the consumer advisory on it. A Consumer Advisory Reminder shall include asterisking the food item to a footnote that states: * Consuming raw or undercooked meats; poultry; seafood; shellfish; or eggs may increase your risk of foodborne illness.- Pf Consumer Advisory will be attached to each menu with a label maker. Manager also plans to contact the corporate office that can reprint the menus with an appropriate consumer advisory.
