4-601.11(A); Priority Foundation; Several food scoops stored as clean had food residue on the interior scooping mechanism. Equipment food-contact surfaces and utensils shall be clean to sight and touch. CDI- scoops removed for cleaning. 4-501.114 (C); Priority; Quat sanitizer in three comp sink measured 64F. A quaternary ammonium compound solution shall have a minimum temperature of 75F. CDI- quat remade with warmer water.

Maintain TCS foods in cold holding at 41F or less. CDI- cheese voluntarily discarded. Ambient air of walk-in observed at 38F. Door may have been left open too long during stocking. No points taken.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

3-501.15; Priority Foundation; Recently prepared salads cooling on the service line. Refer to temperature chart above. TCS (Time/Temperature Control for Safety) foods shall be cooled using rapid cooling equipment (walk-in cooler/freezer); small/thin portions; metal pans; or by using ice baths. If unable to cool to 41 F and immediate service is needed; submerse salads completely in ice to keep cool. CDI - Salads moved to cool rapidly in the walk-in cooler.
