3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food; Disposition (P) Three bags of boiled eggs were maintained beyond 7 days within tall reach-in cooler (1/30). Portioned bags of ham and turkey were not labeled with the dates of preparation. TCS foods shall be used or discarded within 7 days of preparation; with day 1 beginning on the day of preparation. CDI: PIC voluntarily discarded eggs. PIC labeled bags of ham and turkey.

3-501.19(B)(3) Follow written procedures for foods held using Time as a Public Health Control (TPHC) for 4 hours. Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control (Pf) Boiled eggs; omelet; and milk were not labeled with times of temperature removal. CDI: Food was discarded by PIC. Ensure that food is labeled with the time of temperature removal. White board with marker within back kitchen is acceptable for tracking times of these food items.
