5-501.113 Covering Receptacles (C) One of the two lids to the dumpster has been ripped off of the bin; whereas the other lid is broken; therefore unit it not properly covered. PIC has contacted company to replace and is awaiting a replacement. Keep dumpster; outside waste containers covered with tight-fitting lids or doors. No points deducted at this time.

3-501.16(A)(1) ; Priority; Beef and cheese chalupas on service line observed at 90 F. Beef and cheese chalupas in reach in warmer observed at 110 F. Black beans on service line observed at 115 F. Temperature control for safety foods shall be maintained at 135 F or higher. Corrected During Inspection - PIC immediately pulled black beans to discard and replenish wish product maintaining at 135 F or higher. Chalupas were immediately pulled to reheat back up to 165 F.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

7-204.11 ; Priority; One sanitizer spray bottle observed below 200 ppm of quaternary ammonia sanitizer. Chemical sanitizers applied to food contact surfaces shall meet the appropriate requirements for concentration. Corrected During Inspection - PIC immediately discarded this and refilled the bottle to meet 200ppm.
Cleaning products, pesticides, or other chemicals were stored or labeled in a way that could let them get into food. This is serious because chemical contamination can make people sick quickly.

4-501.11; Core; Walk in cooler; at the time of inspection; was not maintaining 41 F or less. PIC stated that there is currently a work order in place for this unit and that they are utilizing the next door middle school's walk in cooler for food storage until unit can be repaired. Facility does have a functional walk in freezer and reach in cooler that are currently storing their TCS food items at appropriate temperatures. PIC will email inspector with updates as cooler is repaired. Equipment shall be maintained in good repair and proper adjustment.
