3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Upon arrival; the walk in cooler and all TCS food items inside of this unit was registering at 43 F. Temperature control for safety foods shall be maintained at 41 F or less. Corrected During Inspection - Ambient air from fans inside walk in cooler registering at 44 F. External thermometer registering at 47 F. Per staff; the door has been opened and closed frequently throughout prep and facility also received milk delivery and produce delivery during inspection. Upon viewing daily temperature log of walk in cooler it was registering at 42 F earlier and 46 F was noted for 10/1/24. Walk in cooler door was kept closed upon discovery in hopes to bring the temperature of the unit back down to 41 F; but after 30 minutes the unit was still registering between 43-44 F. PIC called maintenance during inspection and requested emergency service who will arrive soon. Requested that all TCS foods be moved into walk in freezer or stored at middle school next door as they have had to do in the past. Inspector will perform verification follow up tomorrow morning.
