3-501.15 Cooling Methods (Pf) Lettuce in front display case had a cooling rate of 0 (0 degrees/ 40 minutes). Lettuce was cooling with a tight fitting lid in a heavily trafficked cooler. Food being cooled shall be loosely covered or uncovered if protected from overhead contamination. CDI: Lettuce moved to walk-in cooler with lid removed.
