4-302.12 - Noted food thermometer missing from mobile food unit. Food Temperature Measuring Devices (A) FOOD TEMPERATURE MEASURING DEVICES shall be provided and readily accessible for use in ensuring attainment and maintenance of FOOD temperatures as specified under Chapter 3. (B) A TEMPERATURE MEASURING DEVICE with a suitable small-diameter probe that is designed to measure the temperature of thin masses shall be provided and readily accessible to accurately measure the temperature in thin FOODS such as MEAT patties and FISH filets. VR - PIC will provided an available food thermometer by August 23rd. PIC can contact EHS; Tracie Davis at (984) 239-1105 once food thermometer purchased and available.

3-304.14 Wiping Cloths; Use Limitation- Noted wet wiping cloths stored in 0 ppm chlorine sanitizer. Keep wet wiping cloths submerged in sanitizer solution in between use. Chlorine sanitizer shall be maintained between 50 -200 ppm.
