The person in charge shall be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program. Ensure the person that is left in charge is a certified food protection manager. CDI- A list of ANSI approved CFPM classes is available at wake.gov/food.

3-501.18; Priority; Cut watermelon was missing a date label- cubed pieces were found in the prep cooler and half melon was found in the tall reach-in cooler. Time/Temperature Control for Safety (TCS) food shall be discarded if it is in a container or package that does not bear a date or day and once it exceeds its date for time/temperature safety (7 days from preparation or opening if held at 41F or below). CDI- Cubed melon was voluntarily discarded. Date was known when half melon was cut and PIC was allowed to place a date label on product.

7-201.11; Priority; Chemical spray bottle was stored on a prep table in the back area. Poisonous/Toxic materials shall be stored so they cannot contaminate food; equipment; utensils; linens; and single-service articles. CDI- Chemical was relocated. 7-102.11; Priority Foundation; One spray bottle of fabuloso was missing an indentifying label. Working containers of toxic/poisonous chemicals taken from bulk shall be labeled with the common name of the chemical. CDI- Bottle was labeled.

3-302.15; Core; Whole avocados found in wire baskets ready-to-use with SKU stickers still remaining. In prep cooler; cut avocado found with sticker still remaining. When asked; PIC stated that these fruits and vegetables are already washed. Except for whole; raw fruits and vegetables that are intended for washing by the consumer before consumption; raw fruits and vegetables shall be thoroughly washed in water to remove soil; stickers and other contaminants before being cut; combined with other ingredients; cooked; served; or offered for human consumption in ready-to-eat form. Ensure stickers are removed during the washing process.
