CDI: PIC from Sister Liu's stated that lettuce; beef; and chicken were removed from refrigeration within last hour. He further explained that noodles were prepared prior to leaving facility (~10-20 minute drive). Food was placed into walk-in freezer on sheet tray to rapidly cool to 41F. Food is being delivered on an unrefrigerated truck within plastic containers. REHS contact Durham Env Health to request review of catering practices.
