3-501.18 Ready-To-Eat Time / Temperature Control for Safety Food; Disposition; Priority; Chicken salad in container dated 11/5 and bag of deli ham dated 11/10; both exceeding 7 days. TCS(Time/Temperature Controlled for Safety) foods prepared in house and opened packages shall be date marked and kept for no more than 7 days at 41F or below excluding time in freezer. Chicken salad is made in house and container was full with about one to two portions removed; and not frozen. Ham is kept frozen and removed as needed; and date marked when frozen. New date marking is needed when removed from the freezer to ensure items are not exceeding 7 days. Dates changed to correct dates during inspection. Ensure label is removed and cleaned on lid of containers when making new product.
