Proper hot holding temperatures
3-501.16(A)(1) ; Priority; Tater Tots portioned in paper boats on the serving line do not remain above 135F. Manager moved the tater tots to the enclosed hot holding cabinet prior to inspection to maintain heat. We discussed time-holding that allows 4 hour-holding followed by disposal with written procedures. Science does not support disposal of the tater tots that will be served during this lunch period. Manager offered to discard the tater tots previously held on the serving line. Be mindful; rules require 135F without the use of: Time as a Public Health Control. discussed today
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
