3-501.16(A)(1) ; Priority; Grilled cheese in the hot box was observed holding under 135F. Hot TCS foods shall be held at 135F or higher. PIC indicated that the cheese was cold when sandwiches were prepared and was not heated enough in the oven immediately before inspection. CDI- grilled cheese was placed back in the oven and heated to over 150F before being placed back in the hot box for hot holding. No points taken today.
