TCS (time/temperature control for safety) food in hot holding shall be maintained at 135°F or above. CDI - Pizza slices moved into oven for reheating. Pizza slices placed in trays that did not allow for the majority of the food to be in contact with the tray; allowing for it to cool rapidly; REHS recommends using different containers for the pizza.

PIC has stated that this unit is having issues; do not store TCS foods in this cooler until temperature issue has been fixed. Repeat.
