Ambient air of this prep cooler measured 44F-45F. Maintain TCS foods in cold holding at 41F or less. CDI- Ready-to-eat; TCS foods holding above 45F were voluntarily discarded; TCS foods holding 44F and below were allowed to cool down. Unit was adjusted to a lower setting and ambient air measured 38F-39F prior to leaving establishment. Knob to adjust temperature is easily accessed in the prep cooler and may have been bumped at some point. Use thermometer to check internal food temperatures throughout the day. Monitor ambient temperatures of refrigeration units regularly.
