3-501.16(A)(1) ; Priority; Hamburger was holding 120F in the hot box. TCS (Temperature/Time Control for Safety) foods shall be held hot at 135F or above. CDI-Burgers in unit were voluntarily discarded. Ambient air in unit was set to 127F; EC would recommend a higher setting to keep food hot. Unit will be adjusted; and will not be used until it can hold food at 135F or above.
