4-501.114 Manual and Mechanical Warewashing Equipment; Chemical Sanitization - Temperature; pH; Concentration and Hardness (P) Chlorine dish machine observed at 0 ppm. Chemical dish machine shall operate per data plate; which requires at least 50 ppm of chlorine. Corrected During Inspection - Upon discovery; the container of sanitizer was minimal inside container feeding into dish machine; therefore PIC replaced container with brand new sanitizer; but after several cycles the concentration was still at 0 ppm. Feeding lines of dish machine were not feeding sanitizer into machine. PIC put in a work order for this to be repaired and will only wash; rinse and sanitize dishes in three compartment sink until this machine can be repaired to meet data plate specifications.
