2-102.12 (A) Present employees are not ANSI certified food protection managers. PIC shall demonstrate knowledge by being a certified food protection manager. A list of ANSI approved CFPM classes is available at wake.gov/food.

4-501.114(C) Sanitizer in the ware washing sink is very weak; nearly undetectable. A quaternary ammonium compound solution shall (1) Have a minimum temperature of 75F; P (2) Have a concentration as specified under sec. 7 204.11 and as indicated by the manufacturer's use directions included in the labeling; P and (3) Be used only in water with 500 MG/L hardness or less or in water having a hardness no greater than specified by the EPA-registered label use instructions; P Use test strips to verify concentration is at least 200 ppm (very blue as the sign says above the sink for Steramine tablets). Sanitizer was tested today; emptied and re-made. We also discussed the option of using bleach to mix sanitizer. 4-602.11 Equipment Food-Contact Surfaces - Frequency (P) Ice Machine interior has visible black and white microbial growth. Extensive cleaning inside the ice machine is needed. Clean the ice machine often enough to prevent accumulation of microbial growth.

Multiuse food contact surfaces shall be smooth; free of sharp internal angles; crevices and assembled to allow access to clean. -Pf Assure the food preparation sink can be effectively cleaned or replace the sink. 4-202.11 Flip Top Lid on the refrigerator has exposed insulation since it is coming apart. There is black growth visible. Multiuse food contact surfaces shall be free of open seams; cracks; sharp internal angles; crevices and assembled to allow access to clean. -Pf Secure the refrigerator top after effectively cleaning it to eliminate exposed insulation.
