4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Tongs stored on clean equipment rack were not clean to sight and touch. Observed food debris on food contact portion of utensil. CDI by placing in three compartment sink.

3-304.14(B) Hold in-use wiping cloths in properly concentrated sanitizer between uses. Sanitizers for espresso and coffee machines were below 200ppm for quaternary sanitizer. CDI by remaking solution at a concentration of 300ppm.

3-304.12 (E) In-use utensils; such as ice scoops or utensils for non-TCS food; must be stored in a clean and protected location. Observed ice scoop store din a container with sitting pooled water. Ice scoops can either be stored in a clean container where water drains or inside the ice bin or ice machine with handles out.
