4-301.11; Priority Foundation; The walk-in cooler has an ambient air temperature of 60F; walk-in freezer and all of the reach-in coolers are not able to properly hold TCS foods at 41F or less (no food related to catering operation was inside). EQUIPMENT for cooling and heating FOOD; and holding cold and hot FOOD; shall be sufficient in number and capacity to provide FOOD temperatures as specified under Chapter 3. Verification Required- EHS will return on Monday; June 10; 2024 to verify that adequate refrigeration is available. If it is determined that the capacity of refrigeration is not adequate we can suspend or limit the amount of food that comes in from another permitted facility.
