3-304.12 (C ) Knife stored in-between flip top cooler lid with minor food debris. Store in-use utensils on a clean portion of the food preparation table or cooking equipment. The utensils and storage surface must be cleaned and sanitized every 4 hours. Manager removed knife and re-arranged flip top cooler empty side to allow for a container to keep knife stored.
