3-501.16 (A) (2) and (B) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) observed sliced tomatoes in prep unit at a temperature of 43-45F. All other food items were at or below 41F. PIC just finished slicing tomatoes and placed in unit. Tomatoes are stored in cold unit until need then sliced and placed in service. Recommend placing sliced tomatoes in ice bath after prep then placing in unit. CDI by placing in ice bath along with cooked onions inside cooler.
