Chemical sanitizers that are used to sanitize equipment and utensils shall be provided and available for use during all hours of operation. PIC indicated facility had run out and delivery truck was coming within the hour. Sysco truck arrived near end of inspection with supplies.

3-501.16(A)(1); Priority; Queso on the serving line measured 120 - 130F. Maintain TCS foods in hot holding at 135F or above. CDI- queso reheated to over 165F. All other foods were sufficiently hot.
