Store equipment and utensils in cleanable containers. Discussed using metal or lexan pans to store the cutters. PIC will bring them next time he makes noodles.

4-501.14; There was residue in all 3 compartments of the 3-compartment sink; and on the drain boards. Warewashing machines and the compartments/drainboards of sinks used for washing and rinsing equipment; utensils; raw food; etc. shall be cleaned before use; throughout the day to prevent recontamination of equipment and utensils; and at least every 24 hours if used. CDI-Sink was cleaned and sanitized before use.
