Maintain TCS items at 135 F and above for hot holding. CDI- Noted items were reheated and placed back on the line.

3-501.16(A)(1); Priority; For potentially hazardous foods temperature controls for food safety shall be maintained. Ground beef and cheese and cheese sauce on the service line was 114-115 degrees F. Ground beef and cheese and cheese sauce in the hot holding cabinet were at a temp. of 125 degrees F. Hot food items must be kept at a temp. at or above 135 degrees F. until service. Keep hot holding cabinet on a higher temp. setting to keep food product at a temp. of 135 degrees F. or above until transfer to service line. Corrected during inspection: Out of temp. hot food items will be reheated to a temp. of 165 degrees F. or greater before replacement on service lines.
