Ensure that a regular cleaning schedule is applied to prevent buildup of debris. 4-602.13 Nonfood Contact Surfaces (C) Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues.

3-501.16(A)(1) ; Priority; Queso cheese in a hotbox unit was holding as low as 122F. Ground beef was holding as low at 130F in another hot box. Potentially hazardous food being held hot shall remain at 135F or above. CDI- Both food items were reheated during the inspection. Adjust hot box units to hold all food at 135F or above.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Thermometers provided & accurate
4-203.11; Priority Foundation; Three digital thermometers were kept accessible in the same container for use in verifying food temperatures. Two of these thermometers read 31F-32F when placed in ice bath and one thermometer read 37F-38F when placed in ice bath. Food temperature measuring devices that are scaled only in Celsius or dually scaled in Celsius and Fahrenheit shall be accurate to ±1 degree Celsius in the intended range of use. CDI- Thermometer that was reading incorrectly was removed from the batch and placed in another location to be calibrated in the near future.
Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.
