Inspector’s notes
Ready-to-eat, TCS food that was prepared in a food processing plant and subsequently opened in a FSO or a RFE is not properly date marked. Absolutely for a more formal inspection report style. An opened container of cut fruit was observed stored in reach in cooler without a date Mark to indicate the date it was opened. The person in charge stated that the product have been open that morning the product was immediately date marked with a discard date of seven days days.
