Supplemental ware washing equipment to be used intermily.

"3717-1-04.4(L) - Violation - Mechanical warewashing -sanitization temperature The rinse temperature in a mechanical warewashing operation was not adequate to sanitize dishes and utensils."
"OBSERVATION: Mechanical warewashing -sanitization temperature The rinse temperature in a mechanical warewashing operation was not adequate to sanitize dishes and utensils. Observed main bar mechanical dish equipment final rinse temperature <180F (article surface temperature = 136F). Discontinue usage of equipment until necessary repairs are completed. CORRECTIVE ACTION: PIC indicated service request would be placed for diagnostics/repairs of equipment. 3-comp sink/supplemental ware washing to be used interimly until necessary repairs are completed."
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
