4.5(A)(2)(3) - Equipment, food-contact surfaces, nonfood-contact surfaces, and utensils
Non-food contact surfaces are dirty. Observed chicken purge falling on the floor when chicken was being moved from the container directly on the floor. This could possible contain bacteria that is being transferred to the floor. Must prepare chicken on a surface that can be cleaned and sanitized right after handling raw meats.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.
