"OBSERVATION: Observed cheese holding at 45°F, 44.6°F, and 47.6°F for an unknown period of time. CORRECTIVE ACTION: Cheese was voluntarily discarded by PIC and food employee."

"WIC was not maintaining TCS food below 41°F after a defrost cycle. Food out of temperature for an unknown period of time was voluntarily discarded. WIC fell to 36°F by end of inspection. PIC said they would reach out to facility ownership right away to have WIC adjusted and would only store TCS food in the back of the unit where foods would be maintained at appropriate temperatures."
