Inspector’s notes

Ready-to-eat, TCS food that was prepared in a food processing plant and subsequently opened in a FSO or a RFE is not properly date marked. Observed various TCS foods with no discard date, PIC indicated date marking machine/printer not functioning. Replacement has been requested. PIC to ensure all TCS foods are properly date marked within facility. PIC indicated obseerved TCS foods were opened within 1-2 days of inspection.
