TCS foods were being hot held at temperatures <135° F or a roast <130° F. Observed cheese cups stored in display case between 90-100°F, allowed for the cheese to be considered under time in leu of temperature for the day but talked with PIC about using cheese machines to maintain 135°F hot holding temps or higher temperature stable plastic cups for the cheese.
