The person in charge could not explain the relationship between food safety and providing equipment that is sufficient in number and capacity, properly designed, constructed, located, installed, operated, maintained, and cleaned. Observed 3-comp sink that is not being properly operated. Missing drain plugs to be able to submerge dirty dishes in each sink. Management brought drain plugs to sink.
