Official wording
3.4(A) - VI. Time/Temperature Controlled Safety Food - Frozen food storage, temperature / time control, TCS
Inspector’s notes
Foods in frozen storage exhibit signs of thawing or refreezing.
Observed a couple of bags of frozen goods with signs of thawing. Advised PIC to not store large boxes or bags on the top shelf in order for cold air to reach the bottom of the freezer.
In plain English
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
Single-service or single-use articles or cleaned and sanitized utensils were not handled, displayed, and dispensed so that contamination of food-and lip-contact surfaces is prevented.
Observed large plastic bin with plastic spoons arranged in a manner where the handle is contaminating the spoon portion. Advised PIC to where gloves when grabbing spoons to not contaminate the food contact surface.
In plain English
An issue that does not fit the common categories. Check the official wording for details.
