"OBSERVATION: Observed sliced fruit being held higher than 41° F at the bar. TCS foods were being held at temperatures >41° F. CORRECTIVE ACTION: Sliced fruit must be held at 41° F or lower. If kept on ice, the ice must reach the same height as the food. When kept submerged in ice, the food should stay at proper temperatures. Or, keep the fruit in a cooler."
