Sanitizer concentration is not being monitored. Observed QAC sanitizer concentrations <150PPM. Discontinue practice of using hot water in sinks/buckets. Advised PIC ideal water solution temperature should be room temperature/75F.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

"OBSERVATION: RTE TCS, date marking-prepared in processing plant Ready-to-eat, TCS food that was prepared in a food processing plant and subsequently opened in a FSO or a RFE is not properly date marked. Observed various opened, bulk deli meats/cheeses, held within facility, with no discard date. CORRECTIVE ACTION: PIC to ensure all opened processed and/or prepared TCS foods, held >24 hrs, have discard date clearly marked. *** Best practice is to date mark open/prep date and discard date on all items. ***"
