Inspector’s notes

Equipment food-contact surfaces or utensils were not sanitized before use and after cleaning. The mechanical dishwasher was dispensing sanitizer however testing showed that the sanitizer concentration was not at the required level during the inspection. The person in charge contacted the maintenance company responsible for servicing the dishwasher .A maintenance technician arrived on site. Repaired the unit and corrected the issue. The technician determined that the improper sanitizer concentration was caused by a defective manufacturer installed components after the repair the dishwasher was retested, and the sanitize a concentration was verified to be at the required level.
