Sink compartments could not accommodate the largest piece of equipment in the facility and there is no alternate warewashing equipment that could be used. Observed large bowl on 3 comp.sink which can not be fit in 3 comp.sink to wash it properly there is no alternate equipment available either. Need bigger sink or provide alternate method to wash it properly.

Miscellaneous sources of contamination observed. Observed an employee making flower to go on cake with bare hands and these flower then hanged on chains hanging on ceiling uncovered. Must use gloves when make flowers because flowers became food contact surface when put on cake. Flowers hanging on chains must be covered to prevent contamination of cakes.
