Inspector’s notes
"OBSERVATION: Observed sliced tomatoes holding at 48°F in table top refrigerator and lettuce holding at 50°F in reach in cooler for less than 4 hours per PIC. CORRECTIVE ACTION: TCS foods were moved from tabletop refrigerator which was noted at below 41°F by end of inspection. Discussed with PIC turning on refrigerator earlier and making sure food is fully cooled after preparing prior to placing in unit. TCS foods were moved from reach in cooler to another refrigerator maintaining proper temperature. PIC said a new refrigerator was on order. Reach in refrigerator is for non-TCS foods unless adjusted, repaired or replaced to maintain TCS foods below 41°F."
