Food-contact surfaces were not clean to the sight and touch. Observed biofilm growth inside the ice machine located in the basement. To ensure proper sanitation, all ice must be discarded, and the interior surfaces thoroughly cleaned and sanitized before returning the machine to uses.

The Person in Charge (PIC) was unable to provide a HACCP plan for reduced oxygen packaging of food items prepared on-site but stated that a plan has been submitted. Will follow up with the Health Department to verify whether the submission has been received and approved. Must discontinue ROP activities until then.

PIC stated that the three-compartment sink will be used for washing and sanitizing dishes until the test strips show sanitizer is being administered.
