The operator is not using an effective method for cooling. Observed improper ice bath solution setup for cold held TCS foods. PIC corrected holding setup to ensure compliant cold holding temperatures.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

TCS food was improperly thawed. Observed packaged, frozen hot dogs thawing improperly in 3 compartment sink. Discontinue practice. PIC to ensure proper thawing method is implemented, when necessary.
